Summer Cobb Salads with Herby Yogurt Dressing

prep time: 20 minutes | Cook Time: 20 minutes | Makes 4 - 5 servings


salad Ingredients:

4 cups chopped cooked chicken

8+cups chopped romaine lettuce

2 cups sliced strawberries

6 strips bacon, cooked and chopped

2 ears of corn, corn cut off the cob

2 avocados, diced

4 oz feta, crumbled

1/2 cup pickled red onions or thinly sliced red onion

dressing Ingredients:

1 cup Full Fat Greek Yogurt

1 cup fresh herbs - I like a mix of basil, cilantro & parsley

1 close garlic, peeled

2 tbsp red wine vinegar

1 jalapeno (optional)

1 tsp salt

pepper


To assemble the salads for meal prep, line the containers up on the counter (I would use 4 cup size).

Layer all the salad ingredients as shown in the photo above.

To make the dressing: Blend all dressing ingredients together in a blender or with an immersion blender until smooth. Do not overmix or dressing will become watery.

Top salad with dressing before serving. Enjoy!
