Greek Chicken Salad

prep time: 15 minutes | makes 6 servings


4 cups cooked diced chicken (i roast a 3 lb chicken for mine)

1 cup chopped tomatoes

1 cup chopped cucumber

1/2 cup chopped kalamata olives

1/2 cup diced red onion

1/2 cup crumbled feta

1/4 cup fresh dill, chopped

2 tbsp fresh mint, chopped

dressing ingredients:

1 cup Greek Yogurt

Juice of a lemon

2 tbsp red wine vinegar

1 tsp dried oregano

1/2 tsp garlic powder

1/2 tsp salt

pepper


Mix together the dressing ingredients in a small bowl. Add the chicken and remaining ingredients to a large bowl. Mix in the dressing. Let sit 1 hour for flavors to meld. Will last 3 days in the fridge. May need to add additional salt as it sits.

Serve over greens, with crackers or on toasted bread.
